Colorado Beef Burritos

Ingredients:

2 lb. stew beef

2 12 oz. cans enchilada sauce

1 cup chopped onion

1 cup beef stock

6 flour tortillas

2 cups shredded cheese


Directions: Label bag and add the stew beef, 1 can enchilada sauce, onions and beef stock. Freeze until ready to cook. Thaw slightly and place in slow cooker. Cook on low for 6-8 hours until beef is tender. Remove beef and shred. Divide beef between the flour tortillas, place in greased baking dish, top with other can of enchilada sauce and cheese and bake for 20-30 minutes until cheese is melted and bubbly. Serve with salsa, guacamole, shredded lettuce and tomatoes

Broiled Tilapia with Mustard Chive Sauce

This dinner was so delicious! One of my favorite fish meals yet.

Ingredients:

Fish:

Oil cooking spray or EVOO
4 (5 to 6-ounce) tilapia fillets
Extra-virgin olive oil (EVOO)
Salt and pepper

Sauce:

1/4 cup plain, full-fat Greek yogurt
2 teaspoons agave nectar or honey (I used honey)
2 teaspoon Dijon mustard
Juice of 1 lemon
2 tablespoons chopped fresh chives
Salt and pepper

For the fish: Preheat a broiler. Spray a small baking sheet or glass baking dish with cooking spray or drizzle with olive oil. Set aside.
Drizzle the tilapia fillets on both sides with olive oil and season with salt and pepper. Arrange the fillets in a single layer on the prepared baking sheet and broil until cooked through and the flesh flakes easily with a fork, about 6 to 8 minutes. Set aside to cool slightly.
For the sauce: In a small bowl, mix together the yogurt, agave nectar/honey, and mustard until smooth. Whisk in the lemon juice and chives. Season with salt and pepper, to taste.
Transfer the tilapia to a serving platter and drizzle with the sauce.

Homemade Low Fat Mayo

Ingredients:
1/2 C. Plain non-fat Greek Yogurt
1 Tbsp. Rosemary (finely chopped)
Zest of 1 Lime
Lemon juice of 1 lime

(egg yolks and oil replaced by greek yogurt)

Haven't tried yet... but must try!! Greek yogurt just replaces everything that I thought I could never give up! Maybe I'll make this for my mama soon since she's having trouble giving up mayo too.

Artichoke Rice Pasta with Shrimp

I made this tonight and it was a huge hit! So good.
 
6-7 ounces Rice Pilaf/Rice-a-Roni
1 (6 ounce) jar marinated artichokes, quarterd and marinade reserved
1 green pepper, chopped
12-15 Green Pimento Stuffed Olives, sliced
3-4 green onions, sliced
1/2 cup mayo
1 Tbsp. fresh lemon juice
Pepper
1/2 - 1 lb. Fresh Shrimp, peeled, tails removed and de-veined

Directions:

Prepare rice as box directs. While the rice is cooking, get a pot of water boiling. Once boiling, add shrimp and boil until cooked through (about 8 mins). Get all your vegetables prepared. Make the dressing by combining the Mayo with the marinade, lemon juice, and pepper. Add vegies to rice mixture and pour over the dressing. Add shrimp and stir up and serve!
 
 
 

Mexican Breakfast Burrito/Wrap

I just made the most delicious, healthy and pretty low in calories breakfast. I thought I would share :)
You can mix this up to be how you please, but trust me, this with all the low fat substitutions was delicious!

Serving size: about 3-4
1 tbsp. Olive Oil
4 eggs (I used whole eggs, but to get rid of more calories, use only egg whites)
2 tbsp. Milk
Salt & Pepper
Cayenne Pepper
3/4 Cup of Mozzarella Cheese (Part Skim)
1 can of Black Beans
1 Avocado sliced
1/2 C. Cilantro (chopped)
1/2 C. Greek Yogurt (Non-fat)
Tapatio (or your favorite hot-sauce) or Salsa
2 tortillas or wraps of your liking. Whole wheat would be a healthy option!- I didn't have any so I used my regular tortillas (Mat refuses to use any other kind lol)

Whisk up eggs, milk and seasonins in a small bowl. Pour oil in pan and heat on low heat for a few minutes. Pour egg mixture into pan after it has heated. Cook to your liking, or how I like my scrambled eggs I treat it almost like an omlete. I wait for the bottom layer to start hardening and then I start folding it over on top of each other, chopping up if necessary, until it is all cooked through.

Meanwhile, heat your black beans up in a pot on low-med low heat. Heat your tortilla up if going the burrito route.

Arrange your burrito/wrap! Eggs first, then cheese, top with beans, hot sauce/salsa, avocado, cilantro and greek yogurt. Hope you enjoy!

I definitely suggest using a low fat option for the tortilla or wrap. The tortillas I used were 120 calories! Thanks for ruining my low-fat option, Mat! :)

I'm back!

Wow, it's been awhile. I think I'm gonna start using this thing a lot more. It's like LJ without the emo and drama.

Life is good! Less than a year until I graduate. School is going well. I feel like I've learned so much in the past few months. My rotation at Lodi Memorial was really awesome. It was an amazing glimpse into the life of a RT. It will be a very rewarding career. There are going to be some seriously difficult times dealing with death and pain all the time, but I think I will make the best of it as much as I can.

Hubster and I have been married for 6 months now! Yep, we beat Kim Kardashian. We're pretty proud. Just kidding :) He's laughing at me right now for writing that. In all honesty though, I could not be happier with my choice in husband! Our dreams have become the same and man does that make life so much easier. We are seriously looking forward to me getting a job as soon as possible after graduation so we can buy our ranch in the country and try for baby #1!

Mat's job is going really well. He absolutely loves working with David. For those that don't know, David is my cousin's husband. They call each other cousins now to make it easy haha. Anyways, the company is Stevens Custom Stoneworks and they do amazing work! So if you or anyone you know needs granite, tile or any kind of that work done, let us know.

Speaking of jobs...it's really odd that I don't have one. I could not be more grateful to my husband for allowing that. It is so incredibly helpful for my schooling. I honestly think it is a huge part of the reason I have been able to learn so much these past few months.

Well it's getting late and I think Mat would appreciate it if I got off the computer so he didn't have to keep rewinding American Idol for things I miss. haha

Valentines Day

So many people hate this holiday. I continue to look forward to it every year, despite never having a decent one in my life. At the least, it's my time to send a little reminder to my loved ones and tell them how much I love them. To me, it's not meant to be a holiday where you are forced to spend money. I don't care about reveiving gifts. It's just a day where that special someone goes a little out of their way to show you how much they love you. I saw multiple fb posts about guys giving massages, or cooking dinner, or making a card on their own that expressed their love. All free things to do, and so incredibly meaningful.

I will always love Valentines Day for that reason. It's an excuse to show your love. Why is that a bad thing? Of course it can be a real let down when it's just like every other day, but at least you can show your love to the ones you care about and feel good about that.

I have an exam today for my school and it's an extremely important exam. I'm really nervous. Getting into my school all comes down to this test. Wish me luck!
